Yola, Nigeria: From Car Trunk to Club Table, Elephant Fish Lunch

Living just ten minutes from the Benue River in Adamawa State, Nigeria; there are a few dietary perks. One is having fresh Elephant Fish caught, then driven to the AU University Club ten minutes away, where it's purchased for a LOT of money (well worth it!), and then cooked with simplicity so that it can be served to many, many customers who like a little variation in their diet (the hot sauce accompanying the fish was a particular extravagance). I'm just trying to show all those doctors who say foreigners shouldn't eat anything that hasn't been cooked to a pulp in Africa (I know it sounds so000 20th century, but it still happens) that fresh, properly prepared food can be healthy and delicious. What's on your plate for lunch?
